How do you serve food on a chilled salt plate?
- Make sure the plate is dry.
- Chill it for 2 hours in the refrigerator or 1 hour in the freezer.
- Set it on a dry cloth, board, or serving tray.
- Arrange food just before guests sit down.
- Clear leftovers when the table is cleared.
Wet food and long contact pick up more salt. Thin slices of fish season in about 10 minutes, while melon or cheese can sit for 30 minutes or more. Our chilled serving guide lists timings for each food.
What can you serve on a salt plate?
Sashimi and crudo, melon and stone fruit, hard and aged cheese, cured meats, butter, and chocolate all work well. Try the chilled salt block sashimi recipe. Cold use needs no tempering, and the same plate can be heated for searing another day. Let a chilled plate return to room temperature before you heat it. The 2 plate set lets you keep one plate hot and one chilled.
After serving, wipe it with a barely damp cloth and let it dry fully before storage.
