For most kitchens, one 12 x 8 plate is the right start. It covers a standard burner, fits most grills, and clears a full oven rack. At 1.5 inches thick, it holds enough heat that cold food does not drop the surface below searing temperature. Compare sizes in our size guide.
How do you use a salt block for searing?
Start with a completely dry plate. Heat it from cold in stages, 15 minutes each at 200 F, 250 F, 300 F, 400 F, and 500 F. Pat food dry, brush it lightly with oil, and sear. Most steak takes about 4 minutes a side, and shrimp or scallops take 2 to 3. Follow the tempering guide for your first heat.
Salt blocks work on gas, in ovens, and on charcoal or gas grills. On an electric coil, use a metal diffuser or cast iron holder. They do not work on induction or glass top stoves. Find ideas in our salt block recipes.

About himalayan salt blocks for cooking
For a 12 x 8 plate, 1.5 inches is the sweet spot. It holds enough heat to sear a full batch without cooling down, heats in 30 to 45 minutes after the first temper, and weighs about 11 pounds. A 2 inch plate holds heat a little longer but is heavier and slower to heat.
Every plate is packed to protect the edges in transit. Record a video as you open the box, starting with the sealed box and shipping label in view, or take photos of the box with the label showing before you unpack. If the plate is broken, email help@naturalsaltco.com with the video or photos within 15 days of delivery. We cannot process a claim without them. Fine surface lines are natural and are not cracks.
