Choose by heat, size, and use
Choose by the food you cook and the heat source you use. A 12 x 8 plate fits most burners, grills, and oven racks and feeds two to four people. For a larger group, a set lets you cook on more than one plate at once. Every plate must follow the first heat schedule before high heat use. Let it cool where it sits, clean it with a barely damp cloth, and store it dry.
