Salt block on induction, glass top, and electric stoves

A salt block works on an electric coil stove with a diffuser or holder. It does not work on induction, because salt is not magnetic, and we do not recommend glass top stoves. Here is what to use instead.

You can use a salt block on an electric coil stove if a metal diffuser or cast iron holder sits between the coil and the stone. You cannot use it on an induction cooktop, because salt is not magnetic and the cooktop will not detect it. We do not recommend glass top stoves, because the weight and heat can crack the glass.

Can you use a salt block on induction?

No. An induction cooktop makes heat inside the pan through a magnetic field, so the pan has to contain iron. A salt block is halite, which is not magnetic. The cooktop does not register it as cookware and produces no heat, whatever the size of the plate.

Some people try a steel interface disk or a cast iron holder on induction. The iron heats quickly and passes that heat to the salt from one face, much faster than the stone can spread it. That uneven heat is the classic cause of cracked plates, so we do not recommend it.

Can you use a salt block on a glass top stove?

We do not recommend it. The risk is to the cooktop, not the plate. An 11 pound stone at 500 F places heavy weight and concentrated heat on glass that most makers do not rate for that load. A glass top can crack or discolor, and sliding a rough stone across it can scratch it. Check your stove manual. If it warns against heavy cookware or cast iron, it will not suit a salt block.

How do you use a salt block on an electric coil stove?

  1. Set a flat metal heat diffuser or a cast iron holder on the cold coil.
  2. Place the dry salt plate on top.
  3. Turn the coil to its lowest setting.
  4. Raise the heat in steps through 200 F, 250 F, 300 F, 400 F, and 500 F, 15 minutes each on a first use.
  5. Check readiness with an infrared thermometer or the water drop test.

The diffuser or holder spreads the ring of heat from the coil across the whole base. Without it, the coil burns a hot circle into the stone while the edges stay cool, and the plate can crack.

No gas stove? Use these instead

  • Oven: the most even method. Start the plate in a cold oven and raise the temperature in stages.
  • Gas or charcoal grill: start on indirect heat, finish over direct heat.
  • Pellet grill or kamado: put the plate on before lighting and raise the set point in steps.
  • Chilled serving: needs no stove at all. Chill the plate for 2 hours in the fridge.

Moving a hot plate to the table

Once hot, the plate stays hot for hours. If you cook in the oven and want to serve at the table, set it on a heat safe tray or holder and carry it with heat resistant gloves. Never set a hot plate on a glass top, a cold counter, or a wet surface.

We do not recommend it. The disk heats much faster than the salt above it and heats only the bottom face, which is the uneven heating that cracks plates. Use an oven or grill instead.
